"I was once told that 'nobody makes their own vodka. It's simply too difficult. They just buy it in and stick their own label on it'. I thought - huh! How hard can it be? Turns out, it wasn't easy but we found the way.
Producing a vodka is part science (physics, chemistry and biology) and part art. Fortunately all those play to my strengths. When producing a varietal vodka, there is nowhere to hide but I knew that we could create the smooth sipping vodka that we sought.
We celebrate our hero ingredient - East Anglian distilling barley, by retaining the flavour, rather than removing it through filtration. What's the point of a vodka that tastes of nothing at all!"
Our premium vodka is created from just three ingredients: barley, yeast and water.
Distilled to the highest purity possible in our bespoke copper still and deliciously smooth.
Gluten-free, as gluten does not distil and is left in the pot at the end of the run.
Unlike standard vodkas, which aim for neutrality in flavour, varietal vodkas embrace and showcase the distinct qualities of their raw materials. A vodka made from a particular type of barley, wheat, or even potatoes will have flavour nuances that reflect the characteristics of that ingredient.
This approach allows the "hero ingredient" to shine by capturing the essence of the raw material during distillation. In our case, East Anglian distilling barley.
Hot water is added to the malted barley to create a mash. This process releases the sugars for yeast to ferment.
We draw off the sugary wort into our fermenter to allow nature to do all the hard work, of converting the sugars into precious alcohol.
The spent barley grains are then sent off to feed happy cows at a local farm.
A copper pot still is perfect for capturing flavour and to round the spirit but in order to achieve the maximum purity that we seek, we built our own column with a local craftsman. Height equals purity and our still and column, measure 5 metres from floor to the top of the column.
Wild Knight vodka is incredibly pure, exiting our still at over 96% ABV.
The distillate is separated into heads, hearts and tails, with just the purest hearts retained for our vodka.
The spirit is then rested before being reduced to bottling strength with reverse osmosis pure filtered water, to create our finished signature vodka.
