"I was once told that 'nobody makes their own vodka. It's simply too difficult. They just buy it in and stick their own label on it'. I thought, ‘How hard can it be?’ Turns out, it wasn’t easy—but we made it happen.
If someone claims to make their own vodka, ask how they do it. Ask to see their fermenters. Then decide for yourself.
Producing vodka is part science - physics, chemistry, and biology - and part art. Luckily, those all play to my strengths.
When making a varietal vodka, there’s nowhere to hide. But I knew we could create the smooth, sipping vodka we wanted.

Our premium vodka is created from just three ingredients: barley, yeast, and water.
It is distilled to the highest purity in our bespoke copper still, resulting in a deliciously smooth vodka.
Our vodka is naturally gluten-free, as gluten does not distil and remains in the pot at the end of the run.
Unlike standard vodkas, which strive for neutral flavour, varietal vodkas highlight the distinct qualities of their raw materials.
A vodka made from barley, wheat, or potatoes will carry flavour nuances that reflect its base ingredient.
This approach lets the 'hero ingredient' shine, preserving the essence of the raw material through distillation.
For us, that hero ingredient is East Anglian distilling barley.
Hot water is added to the malted barley to create a mash. This process releases the sugars for yeast to ferment.
We draw off the sugary wort into our fermenter and let nature do the hard work of converting those sugars into precious alcohol.
The spent barley grains go on to feed happy cows at a local farm.
A copper pot still is perfect for capturing flavour and rounding the spirit. But to achieve the exceptional purity we wanted, we built our own column with a local craftsman.
Height equals purity, and our still and column stand 5 metres tall.
Wild Knight vodka is incredibly pure, coming off our still at over 96% ABV.
The distillate is separated into heads, hearts, and tails, with only the purest hearts retained for our vodka.
The spirit is rested before being reduced to bottling strength with pure, reverse-osmosis-filtered water, creating our signature vodka.
