Adapted from a recipe created at Huber’s in Portland, Oregon and recently featured in Imbibe Magazine, this riff on an Irish Coffee is tricky to pull off but worth it. The punchy alcohol and strong coffee complement each other as they get smoothed out by the cream top.

Ingredients

25ml Overproof Rum
10ml Triple Sec
50ml Wild Knight® Espresso Martini
90ml Hot Espresso
Single Cream

Method

Sugar rim a tempered glass and add the rum and triple sec.
Light the mixture and swirl the glass to caramelise the sugar.
Pour in the Espresso Martini to extinguish the flame.
Add in the coffee and layer the cream on top.
